As Tyler said, the Pacific Ranges around San Clemente and San Nicolas Island are used for test and evaluation of Black Projects. San Nicolas in particular has some specialized infrastructure such as radar and optical tracking. Due to its remote location, surrounded by 50 miles of water in all directions, it is a great location for UAV testing.

I have no concrete information about testing being conducted in Alaska, but I would be very surprised if that vast airspace over virtually uninhabited land was NOT used for all sorts of Black Projects. Perhaps someone with more info on that can chime in.

Also, in recent years the NTTR and the R-2508 airspace (Edwards and China Lake) have been integrated into an even larger test range. You can frequently see altitude reservations (basically three dimensional chunks of airspace) connecting the two airspaces across US 95 being blocked off. To a lesser degree the UTTR (SW of Salt Lake City) and the Fallon Ranges are also part of the super range.

Testing mostly happens at night between midnight and 3am, preferably on moonless nights. That greatly reduces the chance of visual exposure even over populated areas. In Rachel we often hear "something" flying late at night but most of the time you cannot even see an anti collision strobe.
