Crash rescue personnel use foggers, not real smoke, in rescue simulators and training. The FAA has (had?) a great crash/rescue/egress simulator at their Oklahoma City facility that used actuators to move the "crashed" aircraft into various post-crash attitude. The "aircraft" was the fuselage of a retired piston engined transport, I think maybe a C-124. I got a "ride" in it while TDY to CAMI, it was very impressive...and scary.
