Unsurprising. Greenewald requested images and/or video of a very recent military operation carried out on a foreign adversaries spy platform. The images and video he discusses that were released, including the MQ-9 Reaper footage, the cockpit footage from the U-2, and the retrieval of the balloon debris were carefully selected and released to very specific folks in the media with the intention of demonstrating the military might of the US to show the Chinese they better not keep messing with us.

As for footage of the balloon itself before the shootdown, keep in mind that one reason they haven't responded to that is simply that any footage they do have would probably have to be sanitized before release to avoid showing the location. Of course, grain of salt and all because I'm just swagging it here.
