I use older model Uniden, Icom and Yupiteru scanners. They are no longer available so the model numbers would not do you much good. I hope that someone can recommend specific models. Since you mentioned Red Flag you want a scanner that covers the military air band (225-400MHz) as well as civilian air (118-136). If you have a bit more of a budget and you also want to listen to NHP etc. and to some of the range ground transmissions (sorry, cammos are encrypted) get a trunking scanner. Make sure the scanner is PC programmable. My Icom scanner has a built in voice activated digital recorder. That is another feature I use a lot in the field.

As for binoculars, a good pair of 12x50 would be a good choice. If your budget allows get a pair of good image stabilized binoculars. I have a pair of Canon 12x36. They are perfect for Red Flag. IS makes a huge difference but has its price.
