Sorry you did not get to see much action. I believe there was no flying due to the holiday. The info you got at the Inn is correct. There are usually two sorties, one late morning and one in the afternoon. In some cases there is also a night exercise.
Today there was some light activity on the Flag freq's. Sounded like orientation day, where the palyers familiarize themselves with the area.
Was anyone at Nellis today? Gregos? Hopefully the Notams will be posted soon...
